“tonights gonna be a good night”!

So, this follow up post to my new years meal is Wayyyyy overdue, but, good things come to those who wait. Like BEP- thats right. BLACK EYED PEAS!
I’m also hoping that good things come to those ladies that are persistent and utlize their savvy follow up skills from all those years behind a desk. A little professionalism goes a long way, hopefully getting a chance at a Major 4 star restaurant! Que Sera Sera!

Sneaky, no?

(Note- I let the first batch soak for 3 days because I forgot about them, and I had Black Eyed peas that grew legs. No me gusta. I don’t recommend this unless you want sprouts- which you can totally make as well!)


BEP-I make all my beans vegan style, and in a pressure cooker. For some reason, I just prefer my beans to taste like beans, not pork or turkey, but to each his own! This is a No judgement zone! Feel free to substitute broth or throw in a  hambone at any given point!

  • 4 cups of Dried Black eyed Peas (soaked overnight-or choose your method of quick soaking)
  • 3 cloves garlic
  • 2 dried bay leaves
  • 1 tsp red pepper flakes
  • black pepper
  • salt (but not until WAYY later)
  • Enough water to cover beans by 2 inches

Finely Chop garlic. Heat pressure cooker on Medium, add oil to pressure cooker, then add spices (but NOT salt).  I always like to give the spices a little toast before adding beans and water. Drain beans from soaking water, and add beans to pot, then add new water. Cover pressure cooker, put on medium high, add pitcock and wait until it starts rattling. Turn heat on medium low, so that its an easy rattle and let cook for approx 30 minutes. Take off heat, release all steam, and open the pot. Add salt to taste, cook for about 10-15 more minutes, and you are good to go.

Fresh beans, Greens, and add some chow chow to the mix for good measure. You’re all set for the new year! (or at least until your next meal.)
